The Clever Dripper is a simple, easy to use coffee brewer that combines the cleanliness of a pour-over with the ease and flexibility of a French Press. At the heart of the device is the unique stopper valve that allows for full immersion of coffee and water when placed on a flat surface, and drains when placed atop a mug or range server. To brew in a Clever dripper, you’ll need:
A Clever Dripper
Standard #4 Paper Filters
Freshly Roasted Coffee
Hot Water between 195-205 degrees
And a Decanter or Mug
We’ll be using Temple’s standard coffee to water ratio, which is two grams of coffee for every one ounce of water. This makes the math incredibly simple. Figure out how many ounces of coffee you intend to brew and multiply that by two to give how many grams of coffee you’ll need. We’ll be brewing 15 ounces, so we’ll be using 30 grams of coffee. If you don’t have a scale, know that a tablespoon of coffee is roughly 7-8 grams.
You’ll want a medium-coarse grind setting, similar to sea salt or a touch finer than a typical French Press grind.
Begin by folding your #4 filter along the bottom seam, and then fold the side seam in the opposite direction.
Place the filter into the Clever, rinse with hot water, and drain.
Add your coffee and shake to level.
Start a timer for three minutes and thirty seconds and pour hot water just off boil until all of the grounds are wet. Wait about 30-40 seconds while the coffee pushes out CO2 and causes the grounds to bloom and bubble.
Add the remainder of your water, making sure all the grounds are submerged into the slurry water. If you’re using a scale, pour until you total 420 grams or 15 ounces. If you don’t have a scale, you’ll want to pour to the top of the vertical ridges.
Place the lid atop the brewer to keep your slurry nice and hot. Now, just wait. And wait. And wait.
When your timer goes off, place the Clever atop your decanter or mug and drain. Your drain time should total around 20-30 seconds.
