We just had a seat in the middle of Madrid and whipped up a little snack.
Raw Chia Gazpacho with Mango Almond Kick
2 TBSP Chiaseeds
1 Tomate
1 Cucumber
1 Lemon
1 sip vinegar
pinch of thyme
Salt
Pepper
1/2 Mango
Almonds
Prepare Mango Almond Kick
Cut Mango into cubes, chop almonds and some salt and mix well.
Prepare Chia Gazpacho:
Grate cucumber and tomato.
Add salt, pepper, lemon juice, thyme and chia seeds.
Let it soak for 20 minutes
Put the gazpacho into a glass and top it of with mango almond kick.
