Adamson Barbecue is unique in Toronto. Owners Adam Skelly and his partner Alison Hunt specialize... no make that obsess on authentic Central Texas Style Barbecue. This means using only wood to cook, lightly seasoning the meat and committing the time to do it right. Located in the Leaside Industrial Park, Adamson Barbecue is hard to find and hard to accommodate. It's only open from 11:00am to 2:00pm Monday to Friday but come early as the lines start at around 10:30 and they're often sold out before 2:00.
Adam and his fellow Pitmaster Matt Pelechaty serve up five kinds of meat; brisket, turkey, sausages, pulled pork, spare ribs, along with classic Texan sides like potato salad, coleslaw and beans. It's hearty, it's real and it's delicious.
This is the product of lots of research and more than a little trial and error. As Adam says, "We just do it this way because we believe in it this way."
