One of our stops along the journey ended up in Capretone, France.
Being on the road for a couple days got us craving some "home soul food", that's why we decided to cook up some noodles do the pasta sauce thingy and play some serious ping pong.
1 red pepper
3 -7 tomatoes
1 miropoix (celeriac, parsleyroot, parsnip, leek)
Handfull of parsley
200 g sunflowerseeds
3 TBSP frying oil
2 TS oregano
1 TS smoked paprika powder
1 TS sweet paprika powder
2 TBSP tomato paste
salt and pepper
250 g spaghetti
How to make it:
Chop up sunflower seeds and dice tomatoes. Grate zucchini and carrots.
Heat up a pan and roast the sundflower seeds.
Slice leek and chop bell peppers.
Add a bit of oil to a pan and the roast your grated and chopped veggies (carrots, leek, zuchinni, bell peppers).
Add fresh herbs, sweet paprika powder, tomato paste, diced tomatoes, roasted sundflower seeds, water and salt and pepper.
NOW! most important relax and get the ping pong game going.
And let that sauce simmer and simmer and simmer some more.
And at some point in time cook the spaghetti.
