Commonly called gnocchetti, malloreddus are made with semolina flour and flavoured with saffron. They are typically served in a sausage meat sauce; the pasta’s sturdy shape and ridges make it ideal for absorbing all the delicious sauce and cheese. My tip for this recipe is to actually boil the pasta before making the sauce, then finish cooking it in the sauce as it reduces. It really pulls all that flavour into the pasta as the cheese melts into it.
