In a small bowl add the honey, yeast and 100ml of the water, stir and allow to activate for 5 mins.
Put the flour into a stand mixer, turn on to low, add the yeast mix, then salt, oil, the rest of the water and knead for 7 - 10mins until smooth and elastic. Shape into a ball, then roll in an oiled bowl, cover with clingfilm and prove in a warm place until doubled in size (about 1 hour). Press into an oiled baking try, add the toppings of your choice (we added olives, sundried tomatoes and rosemary), sprinkle liberally with salt, press flavours in with fingertips. Cover with oiled clingfilm, prove again for about half a hour.
Bake at 180°c for 20mins. Drizzle with oil and sprinkle with a little salt. Enjoy
