Sometimes I feel like I spend more time thinking about side dishes than I do about main courses. Which brings me to this: a side dish that can act as an entree. Roasted eggplant, cornmeal, tomatoes and basil all come together in this comforting dish. Eat it hot or cold, it's great all year long.
