On June 22nd, 2011, I had the pleasure of interviewing, my dear friend and professional pastry chef, Rodolfo Goncalves. The interview was conducted in Queens, NY (Astoria) where he owns and operates his custom pastries company, BMQ Desserts.

During the interview, Rodolfo talks about how he became a pastry chef, what excites him about working with cakes, and his never-ending love-affair with Brazilian soccer. Lastly, he shares with us some of the techniques that he uses to produce some of his edible masterpieces in his kitchen.
