First made by Mrs Kirkham in 1978, Kirkham's Lancashire is now made by Graham Kirkham. When she initially made the cheese, the Kirkham farm would have been surrounded by others also making Lancashire cheese the 'traditional way': using raw milk from the farm's own herd of cows, mixing the curd from several days, wrapping the cheeses in cloth and sealing them with molten butter. Mrs Kirkham's Lancashire is now the only cheese to be produced this way resulting in Lancashire that is rich and savoury with a texture that is known locally as a 'buttery crumble'.
Recently we visited Graham to film him as he made cheese. We hope you enjoy it as much as we enjoy selling and eating his cheese.
