Ceylon Cinnamon also known as True Cinnamon is mainly manufactured in Sri Lanka. Its process is tedious, and labour intensive. It is manufactured by artisans who have passed their skills over many generations.

It is available in seasons depending on the weather and in limited quantities; accordingly more expensive and not always available in stores; unless consumers specifically ask their retailers for it.

Most common is cassia, a similar product from the same family, but with a stronger taste, smell and a higher content of coumarins in order to remain objective please research this point on your own, but if consumed in large quantities could be dangerous to your health.
