Regenerate is an annual event founded by regenerative grain farmer Paul Spence (cktable.ca). Regenerate covers a wide spectrum of the regional food chain with events, workshops and classes. Culinary experiences range from sourdough bread and heritage grain pastries to the craft of pasta and the robust local brewery scene.
The main campus of the Heritage Grain weekend is at Growing Chefs in London, Ontario (growingchefsontario.ca). This video focuses on the 3rd annual Bread Camp, held October 19 to 21, 2018, and featuring two-time James Beard nominee baker Greg Wade of Publican Bakery in Chicago.
