Produced for Chef Martin Benn of Sepia Restaurant and Wine Bar, Sydney.

Martin used this video as a presentation aid during his live cooking demonstrations at the World Chef Showcase in Sydney. Preparing the ingredients for the dish normally takes about 3 hours and since it was impossible to prepare the entire dish on stage from scratch (due to time constraints), we made this video to help Martin show and explain to the audience the processes involved in preparing the ingredients of the dish.
