Martin used this video as a presentation aid during his live cooking demonstrations at the World Chef Showcase in Sydney. Preparing all the ingredients for the dish normally takes about 2 days(!) and since it was impossible to prepare the entire dish on stage from scratch (due to time constraints), we made this video to help Martin show and explain to the audience the processes involved in preparing the different elements of the dish (basically he spoke along with the video).
