I decided to try the pale ale I made at the three week mark. It is supposed to bottle condition for another week, but I figured it was probably OK.
It tasted like Bass Ale just as the kit said. It had a little chill haze (this happens when certain proteins loosely bond at low temperatures), but I thought the clarity of the beer was good. Next time I make an amber colored beer I think I'll put some Irish Moss in to better clarify the finished beer.
