A BALIA is a video about food told by the people behind Modena culinary excellences: cheesemakers, ham producers, Albinelli market people, the Spilamberto’s brotherhood of balsamic vinagrette and all those people who spend energies to enrich our table of those great products that require continuous attention, twenty-four hours a day, three hundred sixty days a year.
A BALIA is the technique used by the hams company “Baldoni” to produce the Modena DOP.
A BALIA is the relationship between the chef Massimo Bottura and the Modena manufacturers, a relationship that wants to improve their limits and offer only the excellence.
This is one of the secrets that make the Osteria Francescana and Massimo Bottura one of the main attractions for tourists all around the world and, at the same time, it's an opportunity for the Modena territory to show its great food tradition.
