i made a super simple chicken soup today. this is how i did it (my dad taught me this).
most grocery stores sell rotisserie (sp?) chickens, so the majority of the work is already done for you.
some have asked me questions. i will try to answer them here.
1. i don't add salt because the broth has enough salt in it.
2. i don't add any other spices because the roasted chicken is usually already spiced and provides the soup with a nice flavor.
3. chop up the tomato and throw it in at any point (the video doesn't show me doing this)
4. i cook my pasta or rice outside of the soup because if you cook it within the soup, it tends to suck up all of the chicken broth leaving you with a lump of chicken and veggies and no broth.
warning - make sure you don't accidently throw bones in to the soup. it could be dangerous when you're eating it.
*** keep this recipe handy. cold and flu season is just around the corner.
