After a couple of years slumming it with our own gas-fired smoker we invested in a Bradley smoke generator, and adapted it to cold smoke in our home-made smoke cabinet. The cardboard box acts as a conduit, and by the time the smoke gets to the cabinet it's pretty much at the ambient temperature.

This was a test run with a single pork belly, overnight we smoked a pile of bacon.
