These are trainees in an up-market Beijing jaozi (small thin-skinned dumplings for dim sum) restaurant. Such a level of hygiene is virtually unknown in my experience and is probably only found here because of the restaurant’s location near to the northern embassy district. The trainees appear to be working very slowly, wrapping the casing round a small ball of dough before discarding it and starting again. They were later seen filling jaozi with minced meat taken from a vacuum pack. The resultant dumplings are served generally steamed but also fried.
