Beijing: Bing in a little booth. The meaning is “parcel” and consists of a wheat flour pancake, an egg broken on top and flipped over to finish cooking, then a coating of hoi-sin type sauce and, optionally, chilli oil, then a rectangle of very light, crispy rice cracker and finally a sprinkling of chopped spring onion, parsley and coriander, folded into a handy parcel and served in a plastic bag. 50 pence to you!
