We had our NGSE students give the kitchen staff a break and make dinner for us one night in Mindo, Ecuador. They learned how to make quilombitos, ecuadorian empanadas, and patacones under the watchful eye of the restaurant's resident abuelita. I still don't know what was more fun - seeing them learn how to properly fold an empanada or listening to them try and pronounce "guanábana."
