Campe Cuisine Vacançe is a summer cooking camp for ages 8-25 in Ouagadougou, Burkina Faso. The camp teaches kids about nutrition, basic "art du table", and emphasizes a regional African cuisine highlighting local ingredients.
The camp also exemplifies some of the social forces that marginalize traditional foods in favor of the high fat, high salt, high meat "modern" cuisine that places imported foods as higher status than local ones. The impediments to food security are complex in the region: its more than just more food, but what kinds of foods people want to spend their food dollars on.
