Dave Smith from St George Spirits muses on the art of distillation while cracking coriander for our the Bristlecone Gin that he and St. George Spirits made exclusively for us to serve at The Interval. Our gin features hand-picked wild juniper from Long Now's Nevada property, plus just a few botanicals including the coriander you see Dave preparing here which was then wok-roasted.
The craftsmanship, care, and dedication of the St. George team is an essential ingredient as well.
