The Cinnamon Cottage was founded by Carol Murphy in 1988, and moved to it's present location on the Rochestown Road, Cork in 1993. After completing a degree in history at University College Cork, Carol decided to follow her passion and immerse herself in her favorite pastime which was cooking and baking. In this video Carol explains the inspiration behind the Gingerbread Man Cake with Orange Icing, Raspberries and Chocolate.
The little ginger bread men and the little gingerbread women were given on fair days to women who weren't married yet and they were also considered to be gifts of the highest importance. It contains many of the spices that all of the main wars were fought over in the middle ages, peppercorns, cinnamon, nutmeg and the clove. The clove was widely used in Medieval England. They were extremely costly; they were as expensive as jewelry. They decorated their homes with them and they carried them with them as they travelled throughout the streets and sniffed them if they passed anything unsavory.
This has given Cinnamon Cottage the inspiration to put an orange cake in between the gingerbread men and cover it in fresh Raspberries so you've a nice fresh cake for Christmas day.
