We made a couple easy sandwiches for a spring afternoon.
Sardine Salad Sandwich
Rye Bread (toast it!)
2 cans Sardines
1 egg yolk
Juice of 1/2 a Lemon
Black Pepper & Salt
Slowly add Olive Oil to one egg yolk while whisking to form Mayonnaise. Add Mustard to taste, I like it spicy. Add Sardines by flaking from tins. Add in diced Tomatoes, Pickles and Onion. Add Salt, Pepper, Lemon juice and any other add-ins you want really, to taste. Spread the salad on toasted rye bread. Eat it open-faced or standard sandwich style.
Prosciutto & Goat Chesse Sandwich
Tart Goat Cheese
Diced Red Onion
Caramelize the red onion with butter, until translucent. Put all those ingredients, and anything else you want, on bread.
