300g plain flour
100g muscovado sugar (light or dark)
1 tsp bicarbonate of soda
1 tsp ground ginger
1 tsp nutmeg
½ tsp mixed spice
125g butter (half a pack)
2 tblsp golden syrup
Melt the butter and syrup in a saucepan over a medium/low heat.
Add the muscovado sugar.
When the mixture has melted remove from the heat and stir well with a wooden spoon.
Add the remaining ingredients and beat together with your wooden spoon to form a soft dough. Allow to cool at room temperature for 30 minutes.
Roll out the dough to the thickness of a £1 coin between 2 sheets of baking paper.
Cut into biscuits and bake on a lined baking tray 200C/180C fan/gas 6 for 5-8 minutes.
Allow the biscuits to stand for 30 seconds before transferring to a cooling rack.
Rolling the dough between the sheets of baking paper prevents it from sticking to the work surface, so it’s easier to work with, less messy and you won’t need extra flour!
If you don’t want to make all the biscuits in one go, simply place the leftovers in a freezer bag, and freeze for a later date!
