This fascinating film was shot on location in Paris at Restaurant Pierre Gagnaire. The occasion was Michel Roux's visit to see 2013 Roux Scholar Paul O Neill who chose Gagnaire as his restaurant of choice to spend three months.
The kitchen was busy and spotless and ran like clockwork. Paul O Neill, The Roux Scholar, had enjoyed his time in the kitchen and had worked hard to fit himself in.
Filming in busy kitchens is not easy but it has become my speciality and the secret is knowing in advance what is coming next and positioning yourself in the right place. Often this mean using both eyes - one to film and one to watch the kitchen!
