Let's go meet the Shaw Family of Greenwich, New York. At Garden of Spices Farm, they raise poultry, vegetables, mushrooms and prepared meats like duck ham and sausages. Using low impact permaculture farming techniques, mostly non GMO and organic feed, and by letting the birds roam in fenced pastures, the family raises some very fine chickens, ducks, geese and turkeys. The vegetables are fertilized by the birds by rotating the crops and the birds every few years. The Shaw's are a big family, and it reminds me of the agrarian family ideals of the founding fathers. The older children are active in developing and producing products to bring to the GrowNYC markets in New York City. Make braised duck legs using a recipe by Mark Bittman.
