2 ripe bananas, mashed
1 medium zucchini, grated
2 cups pumpkin, pureed
2 eggs
1/3 cup coconut oil
1/3 cup honey
1 tsp vanilla extract
1 tsp cinnamon
½ tsp salt
¼ tsp nutmeg
¼ tsp cloves
¼ tsp cardamom
¼ tsp garam masala
1 tbsp grated ginger
2 1/2 cups flour (I used bread flour)
1 tsp baking soda
1 tsp baking powder

Whisk the eggs in a large bowl, then blend in wet ingredients—reserve the zucchini and ginger shreds to fold in at the end.

Then mix the flour and baking powders together in a separate bowl with the spices, and then fold into the wet batter until just blended. Finally, fold in zucchini and ginger.

Baked at 350 in two oiled muffin pans for 25 min, or until an inserted fork comes out clean.
