Sweet Potato Truffles

3 Medium Sweet potatoes
1 cup chopped up almonds
¾ cup rolled oats
1 Medium banana crushed
1 TBSP coconut oil
1 TBSP cinnamon
1 TBSP vanilla
1 tsp. Sea salt

Toppings: Sunflower seeds, cocoa powdered, pumpkin seeds pecans, goji berries, shredded coconut, flax seeds

Wash sweet potatoes (you have the choice to leave skin on or peel- I like the skin on).
Bake sweet potatoes at 350 degrees F for 30-40 minutes, until soft and all the natural sugars start to caramelize on the outside.
Allow sweet potatoes to cool at room temperature.
Then add all ingredients and mix into dough.
Divide into 24 small truffles
Roll ball in the palm of your hands
Roll ball in garnish option
Chill in the freezer for about 10-15 minutes until cool.
Garnish of your choice (goji berries, raisins, pumpkin seeds, sunflower seeds, raw cocoa powder, shredded coconut, etc.).
