South Texas Heritage Pork, chefs John Russ and Pieter Sypesteyn, with Inspired Occasions of San Antonio, coordinated a classic, Cajun-style Boucherie; a family-style event centered around the slaughter and preparation of a whole hog, from head to tail. The menu included dishes like a classic two-loin porchetta, tasso, sauce piquant, boudin and dirty rice. Above is a sample of what the all day event had to offer.
