On a recent trip to Matagalpa, Nicaragua, to share stories with the the Chavarrias family, we were introduced to a local roaster. Porfirio Perez Hernandez has been meticulously roasting coffee for the last 42 years on this wood fired roaster.
Most coffee he roasts locally is not export grade, leaving Porfirio to roast "foxies" on a low temperature, wood-fired roaster for around 45 minutes per roast.
