Chef Zeb Stevenson of Parish demonstrates Braised Heritage Pork with Grits and Kale Pesto. Pork shoulder cut into one inch pieces are slow cooked in a chicken stock with Pancetta, onion, paprika, coriander, cumin, brown sugar, olive oil, and red wine vinegar served over a bed of organic stone ground grits and topped with a kale Pesto of kale, garlic, grated Montasio cheese, olive oil, and lemon.
