It's midnight at Noma Restaurant in Copenhagen, Denmark. Dinner service is over, the place is spotless, yet those wearing aprons are not leaving anytime soon. This is a Saturday night, and the entire kitchen staff has gathered downstairs for their weekly ritual of sharing ideas, inspiration, and personal perspectives on cuisine.
