This easy to make Crustless Thai Coconut recipe is in my Ultimate Body Transformation Recipes Book. It's one of my favourites because it's super tasty and exotic. You can absolutely make it like a traditional quiche with the crust but I much prefer it crustless for a healthier and more nutritious version.
try to use as many fresh ingredients as possible. In this recipe, I used tin tomatoes as I didn't have fresh tomatoes. Pick ripe tomatoes. As usual, I always try to incorporate as much green veggies as I can. Today I have green beans and kale in the fridge so I chopped them up, steamed and added them to the mix.
Don't have a blender? No problem. Just beat the eggs with a fork in a large salad bowl, chop the 1/2 onion, garlic and chilli very finely, add them to the eggs. Then add the coconut milk and the green curry paste in the mix. Pour everything in the quiche dish.
Want extra hot or not hot at all? I've actually used 2 chilli and oh my god that was so hot! You can absolutely omit the chilli, you'll still have the exotic taste of the coconut milk and the green curry paste without the fire in your mouth!
Serve with a large green salad of your choice for extra fibre and antioxidants.
2 tsps. organic coconut oil, for greasing
Green veggies: Handful of green beans and 1 kale stem, chopped.
6 medium sized eggs
2 medium ripe tomatoes
2 shallots or 1/2 onion, 1 fresh chilli, 1 garlic clove
13⁄4 cup light unsweetened coconut milk (400ml)
Step 1) Chop the green beans and kale.
Step 2) Steam or boil the veggies for 5min. I prefer to steam them so they don't over cook. You can buy a cheap steamer at a $5 chop you can put in your pot. Set aside when cooked.
Step 3) grease the oven dish with a soft spatula and coconut oil. Pre-heat the oven at 200C.
Step 4) In a blender, mix together the remaining ingredients: eggs,
Step 5) Pour the eggs mixture in the dish and add in the cooked beans and kale, spread them.
Step 6) cook in the oven for about 30minute or until it's set in the middle. I use a fork to check. If it's sill liquid, cook for an extra 5min and check again until firm.
