  2. Summer Gazpacho Recipe

    Ingredients:
    4 - 5 large, ripe tomatoes
    1 large cucumber, peeled, cored & coarsely chopped (keep about 1/4 of cucumber to chop into tinier pieces to add to soup later)
    1 large yellow bell pepper, coarsely chopped (keep about 1/4 of yellow pepper to chop into tinier pieces to add to soup later)
    2-3 tablespoons raw coconut vinegar, or white balsamic vinegar
    1/3 cup extra-virgin organic olive oil
    handful of basil and or parsley
    Sea salt and freshly ground pepper to taste
    Juice of one lime
     
    Directions:
    Boil water in large pot.  Place an ”x” with a sharp knife at the bottom of each tomato.
    Place tomatoes in boiling water for approximately 2 - 3 minutes.  You will notice skins will start to open up at “x” mark.  Scoop tomatoes out of water and place on cutting board. Peel skins off and cut out the top of tomato where vine was previously connected.  Place tomatoes, cucumber, yellow pepper and herbs in a blender with lime, vinegar and oil. Puree until smooth.
    Pour into bowl and sprinkle in leftover veggies. Season with sea salt (if needed) and pepper. ENJOY!

  3. Homemade Chocolate Recipe

    Ingredients:
    1/2 cup melted extra virgin coconut oil
    1/2 cup cacao or cocoa powder
    2 - 3 tablespoons 100% grade B maple syrup
    2 tablespoons smooth sunflower seed butter (or cashew, coconut, almond butter, etc.)
    1/2-1 teaspoon vanilla extract
    1/2 teaspoon cinnamon

    handful raw nuts of your choice, crushed
    light sprinkle of chunky sea salt
    sprinkle of shredded coconut, or dried fruit of your choice

    Directions:
    Crush your nuts and set aside. Melt your coconut oil and mix all of the top ingredients well. Pour into a bread baking pan or dish - mixture will start to harden, so get right to adding your toppings. Add sea salt and top with crushed nuts and coconut or dried fruit. Place directly into freezer. About 30-minutes or so later, carefully use a sharp knife to break chocolate into bite-sized chunks. Keep cold, it will get soft if left out at room temperature. Savor each piece!

    Note: If you're someone who is highly sensitive to chocolate, give CAROB powder a try. It's a yummy alternative to chocolate, with many health benefits, too!

  4. This juice is simple, great for digestion and is the perfect summer treat.

    Cantaloupe Juice
    Ingredients:
    1/4 of a cantaloupe, cut up
    1/4 - 1/2 cup filtered water (room temperature or chilled)
    dash of cardamom powder
    1/4 wedge of lime

    Directions: Place cantaloupe, cardamom and water into blender and blend. Pour into glass and squeeze lime into juice. Sip slow before of in between meals and enjoy.
