  2. Dorset is washed with whey for two months. The whey is left over from producing Mettowee, the lactic goat's milk cheese that Consider Bardwell Farm also makes. Cultures are added to the whey, many of which are also added to the milk right before it coagulates to eventually become Dorset.
    The changes in color represent yeast growth on the outside of the cheese, a result of the whey wash.
