During a hands-on cooking class at La Tavola Marche (farm, inn & cooking school) in Le Marche, Italy guests forage for wild greens in the field in front of our 300 year old farmhouse (agriturismo). Jason helps guests identify the different edibles and with bags full of dandelion greens, poppy greens, grispigno & more they head into the kitchen to create a rustic tart with the fresh picked wild greens, ricotta & prosciutto.
Recipe and how-to for the rustic tart with wild greens, ricotta & prosciutto. After the work is done, guests dine on the efforts with a dinner filled with local seasonal dishes!

Last summer we videoed Ashley and Jason running their argritourismo La Tavola Marche in the Le Marche region of Italy. We thought they were the perfect subjects for a half hour cooking series and created this "sizzle reel". Their series was under consideration by a prominent cooking network but they eventually passed. If anyone can think of an alternative venue for this program please let us know. If you're visiting the Le Mache region, stop by. The food is great and the Inn beautiful.

We ask the question, "Do you want to be entertained or do you actually want to learn to cook?" Our classes break down the recipes so you learn theory & techniques to apply to any dish!

It's more than just watching an episode of a cooking show on television because this is not only live but interactive! Students have the chance to ask questions along the way, plus the class will be recorded so you'll have access to it whenever you like. (How cool is that?!) Watch the class on your computer, mobile device or tablet. Once you are registered for the class you will receive an invitation to the site, recipes and ingredient lists.

A short film capturing the magic of Befana with the smell of roasted chestnuts and spiced wine, the cold air fills with festive music as Befana's of all ages descend upon the cobblestone streets to celebrate in Urbania (Le Marche) Italy.
La Befana is believed to hail from the medieval village of Urbania in Le Marche Italy. In Italian folklore, La Befana delivers gifts to children throughout Italy on the night of January 5th, the Eve of Epiphany. In addition to delivering gifts, she will sweep the floor before she leaves! It is customary to set out a glass of wine and snacks to thank her for cleaning the house!
