My first experience with Crested Duck Charcuterie was at the Pittsburgh Public Market. Their dazzling booth held an array of cured meats and cheeses that immediately catches your eye upon entering the market.
I love their bacon because Kevin will cut it for you at your desired thickness. My first exchange with him—before I knew who he was—was more or less along the lines of,
“I’d like a half of pound of bacon, please.”
“How thick would you like it cut?”
“--about as thick as it can get before it stops being bacon.”
Kevin’s bacon should comes with a warning—“WILL TURN YOU OFF FROM SUPERMARKET BACON.”
What can I say? I am spoiled now. Normal bacon does not do it for me.
Kevin Costa and Crested Duck Charcuterie were incredibly eager to be in my first video journalism endeavor. A quick drive to Beechview, Pennsylvania on a rainy Monday morning and a few hours with Kevin was all it took to make the magic happen on video. I would learn later that it’s the hours and hours at the editing table later that really makes you doubt your life and the universe as you play video frame by frame as the sound blips in an out.
