1. Mikey Sorbello is a coffee roaster and barista at Climpson & Sons in Hackney. The company was born out of Burgil Coffee, a market stall in the early nineties, set up by Ian Burgess. After a few years Burgess set up shop in East London’s Broadway Market. They focus both on making a mean cup of coffee and roasting the beans as well, signifying their intent to focus on sourcing and roasting quality green beans. Climpson & Sons was established in 2005, and is considered one of the pioneering venues for London’s now-famous coffee revolution.

  2. Harry Amos works for the family company, Lassco, which specialises in architectural antiques, salvage and curiosities. It was established at St. Micheal’s, Shoreditch in 1977 and soon made it’s move to Bermondsey and Vauxhall. The company has salvaged architectural pieces and antiques from the Tower of London, Buckingham Palace, the Savoy and virtually every other Grand Hotel of note. Key to the survival of the company and it’s contribution to the rejuvenation of London neighbourhoods, has been its ownership of the freehold of its buildings - all historic, characterful and cunningly located in accessible and developing areas.

  3. Nicholas Balfe - Brixton

    Nicholas Balfe is a British chef who earlier this year opened his own venture; ‘Salon’ on Brixton’s Market Row. He has worked at several acclaimed restaurants in London including the legendary Frank’s in Peckham, as Head Chef of the Brunswick House Cafe and even a stint with The Young Turks at The Ten Bells. He decided to open ‘Salon’ after working with the ‘Cannon & Cannon’. Taking the opportunity to use the empty space above the deli and develop the supper clubs they were holding into a permanent restaurant. Here he creates set seasonal menus that reflect his passion for fresh British ingredients combined together in inventive ways with a focus on flavour and simplicity.

  4. Trevor Gulliver is a restaurateur and one of the founding fathers of St. John’s Restaurant and Bakery. Together with Fergus Henderson he opened St. John Bar & Restaurant in October 1994 near London’s Smithfield Market. In November 2010 St. John opened their stand alone bakery located along Bermondsey’s DruidStreet. The bakery provides bread to St. John’s locations in both Spitalfields and Smithfield. On Saturday mornings the bakery opens doors for the Maltby Street market, where they sell their famous sourdoughs and doughnuts.
