Making pasta with an extruder is a little different than a sheeter. The recipe we use at Luciano's is:
1400gm of flour
700gm of semolina flour
975gm of eggs
Mix all in a mixer with a paddle then extrude using the bronze dies of the pasta you need.
Cook in salted boiling water for a couple of minutes or until done. Mix in favorite ingredients.
