On our quest for sourdough we found ”Kosmas” sourdough. Kosmas sourdough is based on the use of holy water. We preserve a sample of it in our sourdough library in the Puratos Center for Bread Flavour. In this movie you can discover together with us a centuries old tradition of Greek sourdough making. Altamua bread has a long history. Going back to 37 BC. Today it is one of the only breads in the world with a "DOP". A sample of the sourdough starter is kept in the sourdough library.
