Before the D.O.C days & refined mechanisms
When the grape was jest a grape, black, white or... any shade you like
It was harvested, thrown into a place and crushed in various ways & methods
None of them hygienic
More natural 'sulphites' (various foot diseases, scaling old skin, spiders, flies, mosquitoes, sweat (animal&human) etc. etc...)
With more 'palate' as a final deduction
Drunk with plates of barbecued meat from the pigs
Fed on the must that was left over...
Yum yum yum
Really, what could be better, more genuine, more authentic & more practical than this?
These people should be given a certificate of world life preservation...
As an antithesis to overt sterilization today...
