Sushi is not as easy as it looks, any sushi chef would suggest to make the rice "slightly sweeter". Another secret is to sprinkle the fish with cooking salt and let it rest for 5 minutes. The fish will be dry and compact and easy to slice. As final touch you can create your own "sushi-seasoning" for the rice, i use soy sauce, chili pepper, oil, minced garlic and white wine… once the rice is ready add the "sushi seasoning" the result will be incredible.
