Using salt to cook is a tradition in all the Mediterranean areas such as France, Spain, Portugal and Italy. With this technique, the use of iron skillet, it is even easier to cook. Salt has to be very good,, i prefer to use Sal de Guerande, and sometimes I also add some black Hawaiian salt to get the smokey taste. The food is kind of steamed, you can do meet, fish or vegetables, the taste is really amazing, simply garnish with a green sauce, parsley based and the plate is ready.
