This is a letter to you because you have a lot of seafood around you and need some way of making do with what you have.
This is a recipe I learned from my friend, now cousin, Greg's father, Phil, about...oh...25 years or so ago. And I've been making it ever since. I'm not even sure this is the correct recipe. Either way, it stuck with me and is one of the reasons why I am still a cook to this day. The Clay Pot has Beef Shanks with Black Mushrooms and Goji Berries-which apparently are quite in fashion these days.
This is a perfect dish. It's lowfat, flavorful, easy, and looks great on a table. Mmmm...now this is comfort food.
P.S. Leave the head on people!! That's how you know it's fresh.
