To add additional flavor and nutrition to the walnuts, we are adding them to a herb salad with a smattering of goat cheese. And as always, topped with Sal y Pimienta Avocado Oil and Balsamic Vinegar. Prepare the dish and you'll find yourself saying "That's Vegetarian?!".

An excellent match for both the acidity of the salad dressing and the tangy goat cheese would be a Loire Sauvignon Blanc such as a Sancerre or Pouilly-Fumé. A fun alternative that will also pair well with the candied walnuts would be a dry sparkling, try a Cava or Prosecco. If you must go red, Pinot Noir is probably your best bet.
