        Through a remarkable serendipity, my food colleague Glenn Roberts has secured two wild chestnut-fed hogs. They lived and fed in a rare widow grove a chestnuts. Glenn & I have decided to barbecue one of the pigs at Oldfield Plantation outside of Columbia next Saturday. Glenn & I have been engaged in a year long effort to recapture the old southern chestnut food ways that existed before the coming of the blight in the early 20th century—chestnut grits, chestnut skillet bred, chestnut gravy, chestnut-fed pork and venison. This is probably the first such hog to be barbecued since the 1910s. The pig will be prepared at the Oldfield fire pits beginning next Friday night and served next Saturday (lord willing) around 2 pm. Luminaries from the food press will be attending. Maybe 30 guests attending. An orgy of heirloom stuff (Bradford watermelon pickle—sorghum, muscadine vinegar, and heirloom chile barbecue sauce, chestnut skillet bread). Would you like to film this? Or perhaps have some of your students do the same. It would be great to have a video record of the event. Details are still being worked out. The pigs are on the road as I speak. David S.
