Zucchini and other kinds of summer squash are returning to the farmers market right now. Not only are they versatile, they're also incredibly cheap. But they can also be a SNORE on the palate. So here's a wonderful way to sass them up a bit, bit some coriander, cumin and mango powder. Adapted from a recipe by Neelam Batra. Host & editor: Aarti Sequeira Director, camera & husband extraordinaire: Brendan McNamara Songs: "Senegal Fast Food" by Amadou et Miriam with Manu Chao "Reading Rainbow" by 8bit Betty "Smokey the Bear" by Gene Autrey You'll need: 2lbs zucchini, yellow squash, patty pan, whatever you want or can find 1 red pepper, chopped into 1" squares 1 tbsp coriander powder 1 tsp cumin 1 tsp dried mango powder (amchur) 1 tbsp minced ginger 2 medium tomatoes, chopped Seasoned salt (to taste) 1) Top and tail the squash. If you're using zucchini, slice into 1" rounds. If you're using patty-pans, cut a cross into one end of the squash, cutting about a 1/4 of the way through. 2) Warm a little olive oil in a wok over high heat. Add squash & pepper. Stir occasionally, and cook, uncovered, until some brown spots appear all over. 3) Turn heat down to medium-high. Sprinkle spice powders, ginger and salt all over the veggies. Stir. Cover and cook 2 minutes. 4) Add tomatoes. Stir and cook, covered another 2 minutes until squash is crisp-tender. 5) Sprinkle with chopped cilantro. Taste for seasoning and serve! Don't you just love quinoa? The nutty grain is such a delicious, cheap and flexible source of protein. It works especially well with a South Indian bouquet of fresh coconut, mustard seeds, cumin seeds, tomato and coconut milk. And just because we need to eat our vegetables, how about a head of broccoli in there too? Oh! And watch for me to play the ukulele! I just learned to play that song two days ago! You'll need: 1 cup quinoa, rinsed 2 tbsp vegetable/canola oil 1 tsp black mustard seeds 1 tsp cumin seeds 1/2 fenugreek seeds 6 dried or fresh curry leaves 1/2 tsp turmeric powder 1 15oz can whole tomatoes, chopped, juices reserved 1/3 cup fresh coconut (you can get frozen shredded stuff at the Indian shops) 1 15oz can lite coconut milk 1/2 cup tomato juice (from the canned tomatoes) Handful cashews 2 cups broccoli florets salt and pepper 1) Warm oil in a saucepan until shimmering 2) Add cumin and mustard seeds. They should sizzle upon contact. Cook for 30 seconds or so, until they're done spluttering. 3) Add turmeric, fenugreek and curry leaves. Cook 30 seconds 4) Add chopped tomatoes and shredded coconut. Cook 5 minutes, until tomatoes break down a bit. 5) Add tomato juice and coconut milk. Season, and bring to a boil. 6) Add quinoa and cashews. Stir, then turn heat down to a simmer, cover and cook about 10 minutes until nearly almost cooked, but still soupy. 7) Add broccoli in one layer over the top of the quinoa. Add more water if it's too dry. Cover and cook 5 minutes until broccoli is tender. Serve! Opening song: Fast Food Senegal by Amadou et Mariam (with Manu Chao) All video is mine! Hands off please! For the past 20 years the Mendocino Coast plays host to the Abalone Cookoff. This event, presented by the Mendocino Area Parks Association, is a one of a kind festival where competitors have to go into the ocean and capture their game alive in life threatening conditions, transport it under strict fish and game restrictions to the event, erect a booth and cooking facilities that meet health & safe cooking standards and cook for 200 to 300 judges and ticket holders. For the opportunity to win a vacation in Mexico at a vacation home on the beach or other dive equipment donated by the local dive establishment, Sub-Surface Progression. We designed and produced a series of idents for the new reality cooking show “Ab in die Küche” airing this month on National Swiss Television and sponsered by Betty Bossi. The motto of the show is straightforward: Anybody can cook. The 20-second opener showcases Masterchef Françoise Wicki and Torsten Götz, which we shot in studio during a hectic cooking session. Our CG-artists added vegetables and boiling water into the steam pot. Bon appetit! Producer: boutiq Director: Sebastian Harms
