      Ty Kotz is chef de cuisine at the newly opened Topping Rose House, in Bridgehampton, where he works with chef Tom Colicchio (Co-lick-ee-oo). Originally from a small town outside of Cleveland, at 13 Ty took a job with a vegetable and flower farm near his home. At 15 he enrolled in a summer cooking course, which led to a 3-year apprenticeship with Ali Barker of Piperade, Cleveland. After working in several kitchens in Cleveland, he received a scholarship to the Culinary Institute of America, and later worked in the kitchens of NYC restaurants, Oceana, Tabla, and Cello, before joining Topping Rose. With the theme of “Living Creatively on the East End,” 10 members of the community are invited to present 20 slides at 20 seconds each, yielding six minutes and 40 seconds per presenter. This is a great opportunity to establish new relationships, learn about local resources, and hear from the many artists, writers, musicians, gardeners, farmers, baymen, winemakers, chefs, designers, architects, and other creative professionals who comprise our region.             “Even the most ordinary dish follows a satisfying arc of transformation, magically becoming something more than the sum of its ordinary parts. And in almost every dish, you can find, besides the culinary ingredients, the ingredients of a story: a beginning, a middle, and an end.” The story begins just down the road. It begins deep within the ground. It begins with a melodious union of man and earth. It begins with the farmer’s return to the dust from which he was formed. The laborers cultivate the rich, brown soil and with dirt-coated hands, they call forth the main character of the story- the crops. They take center stage. The sun illuminates their effervescent colors and the rain rouses their earthy scent while they await their transformation. What they will become is up to their next steward- the cook. The journey’s fruition is not bound by the wooden shelves in the pantry. Nor is the transformation of the farmer’s crop limited by stone countertops. Rather, the earth meets the kitchen with a breadth of creativity. And the artist- the cook- uses what the ground has supplied to create something of significance. Their creation does more than feed the stomach. It feeds community. It feeds friendships. It seams together a thread that connects the parts of the story. The story that began just down the road, deep within the ground ends at your table. The story that began with a melodious union of man and earth ends with the harmony of conversation over a delectable meal.
