      “My hope is that my children will have the same passion for this as I do…” Meet Larry Althiser, the owner and head meat cutter for Larry’s Custom Meats in Hartwick, NY, a small farming community in the Northern Catskills. Larry takes pride in his slaughterhouse. He’s been butchering and processing animals for over 30 years, learning through hard work his philosophy on the right way to slaughter animals so we can eat. I spent two days upstate with Larry at his brand new processing plant to learn firsthand how animals become food – a rare opportunity to tell the story of transparency in the meat industry. Truth be told, I was very, very anxious going into this shoot. The night before, I tossed and turned in my bed, restless for hours. I just wasn’t sure if I was ready to see the whole process, to film what I’d been shy to film for years. But, I had to do it. It’s a story I wanted to tell, a good story about a proud butcher open to teaching his trade, and a story I felt compelled to share with many others, like me, who didn’t want to be disconnected to their food any longer. Thank you! http://instagram.com/minhky.le Three films reveal insights into the glaring contrast between home-prepared foods versus foods primed by a food stylist. Through the use of food dyes, cotton-ball stuffing, imitation ice, and an array of other clever devices, these films explore the many trickeries we are ever presented with by commercial industries in our everyday lives. It’s real food, but not really. - Directed, Filmed & Edited by Minhky Le Camera: Panasonic GH4 in 1080p 96fps, 60fps & 4K (compressed to a 1080p timeline). Settings: James Miller's settings - Cinelike V, -5 sharpness, -5 saturation, -5 noise reduction. Glass: Voigtlander 25mm f0.95 Edited and Graded: Premiere CC, FilmConvert. Sound: Foley was handled by borrowing sounds from all over the internet, and through VideoCopilot's sound packs and sampling originals. Details: The overall setup was extremely small. Blue cardboard on IKEA table tops taped on in quite honestly the most primordial way. I used soda water because of the amazing fizz it produces, which normally stays for about 1-2 hours - great for photo and video work. I love being able to punch in to the bubbles as it was shot almost entirely in 4k resolution as it was edited on a 1080p timeline. I had taken a two-day Food Styling course by world renowned food stylist Denise Vivaldo who had offered me personal tips of food styling and chasing life goals. © 2014 Minhky Le
